Good idea tracking this. From what I've noticed, payout method definitely matters. Checks seem slower across the board, usually hitting that 5-7 day range. ACH has been faster for me when available, sometimes 2-3 days. Gift cards are hit or miss depending on the casino's processing.
One thing I'd add to your tracking - whether you had to do ID verification or not. Some casinos verify upfront during signup, others wait until redemption. That backend stuff can add days easy. Also worth noting if you hit any bonus playthrough requirements that delayed your withdrawal eligibility.
The casino size angle is interesting but I haven't seen enough correlation yet to say for sure. Would be curious what your data shows once you compile it.
